Crazy Cauliflower Crust Pizza

 

For some of you this may sound extreme, but prepare to have your mind blown.  Cauliflower is a miracle vegetable that among other things can imitate pizza crust when prepared properly.  Now, I have made a couple of versions of this, and I find that it works better if there is a little flour added to the mix, but you can play around.  If you’re a purist, you can just go for straight cauliflower dough and skip the flour…  Do what you like and enjoy your pizza!

Now why cauliflower and not just whole wheat pizza dough?  Well, although I do approve of whole wheat pizza dough, wheat still seems to shoot my blood sugar up.  So, with cauliflower dough I don’t have to worry as much about high blood sugars and feeling sick all night. #Winning.IMG_3765

Cauliflower Crust Pizza

Ingredients:IMG_3743

1 head cauliflower

1/4 cup oat flour

1 tbsp flax seed meal mixed with water

1 tbsp chia seeds mixed with water

2 tbsp olive oil

1 tsp salt

Chopped fresh herbs to taste

tomato sauce

Preheat oven to 450° F

Mix chia seeds, flax seed meal, and water and let sit for 15 minutes.

Grind cauliflower in a food processor until a mushy mass has formed.  Using a cheese cloth, squeeze as much water as possible from the cauliflower mush.

In a medium sized bowl mix cauliflower, oat flour, olive oil, chia seed/flax seed mixture, and fresh herbs.  The mixture should form a sort of dough which can be made into a ball.

Using hands or rolling pin, roll dough onto a pizza pan covered with parchment paper.

Cook crust for about 40 minutes or until starting to brown and crisp.  Add tomato sauce and any toppings you prefer and bake until toppings are cooked.

Remove from oven, let cool slightly, and enjoy!
