Sometimes there’s nothing better than a banana bread breakfast. I am a creature of habit when it comes to breakfast, and I usually go for eggs and toast or oatmeal, both of which take time to prepare. Sometimes I don’t have much time in the morning, and at those times, grabbing a piece of healthy banana bread to go does the trick. This banana bread is made with yogurt and oats and it’s sweetened by the bananas and the yogurt. What’s better than Breakfast banana bread that combines all your favorite breakfast ingredients?
Oatmeal Chocolate Chip Banana Bread
- 4 extra ripe bananas
- 1/3 cup olive oil
- 1/4 cup vanilla yogurt (I use noosa)
- 3 eggs
- pinch sea salt
- 1 cup oats
- 1 1/2 cups spelt flour
- 1/2 cup chocolate chips
Preheat oven to 350 F
Butter or oil a small loaf pan.
Using a fork peel and mash bananas until they form a paste like mixture.
In a large mixing bowl, mix mashed banana, olive oil, yogurt, and eggs until they form a relatively smooth mixture.
Add sea salt, oats and spelt flour. Mix until you have a textured batter that isn’t too thick. Add chocolate chips.
Pour batter into pan. Bake at 350 F for one hour or until a toothpick inserted comes out clean.
Serve plain or with fruit and a cup of coffee.
