Blueberry Peach Cobbler

Life’s a peach!

Fresh peaches are one of the many things I love about summer. Here’s a quick and easy dessert recipe that’s made with two of my favorite summer fruits. An added plus, it’s lighter and healthier than most southern cobbler recipes out there.  Your peaches should be sweet enough this summer without all of the added sugar.


Ingredients:

  • 4 very ripe peaches
  • 2 cups blueberries
  • 1 cup rolled oats (not quick cook)
  • 1/2 cup oat flour
  • 1/4 cup brown sugar
  • 2 tbs. coconut oil
  • 2 tbs. butter

Directions:

Preheat oven to 375 F.

Slice peaches into slivers about 1/4 inch thick.

In a mixing bowl, mix rolled oats, flour, and brown sugar. Melt butter and coconut oil. Mix oil and butter with oats and sugar mixture to form a crumbly oaty crust.

In a glass pan layer the bottom with peaches and blueberries. Spread crust over top and press down to make a solid oat crust layer.

Bake for approximately 30 minutes or until peaches and blueberries are done.

Serve plain or with some good vanilla ice cream (extra points if it’s bourbon vanilla).
