
Ok, so they are not in the shape of animals and they don’t have those fancy little tags you were never supposed to remove, but these are edible. Better yet, they are soft and chocolatey, the perfect cookie bar. Even better, they are made with beans!!!!
A few of you may have stopped reading at the bean part, but please don’t judge until you try. Beans are amazing things. They up the protein in these bad boys, keep them moist and soft, and make them less caloric.
So, I can’t claim complete credit for these, as the idea was given to me by another blogger Chocolate Covered Katie, but the recipe is all my own.
Beanie Blondies
Ingredients:
1/2 cup coconut oil
1/3 cup maple syrup
2 cups garbanzo beans
1/4 cup water
2 packs stevia
1/4 cup almond butter
3/4 cup sprouted spelt flour
1/2 cup chocolate chips/chunks
Directions:
Preheat oven to 375° fahrenheit
Grind garbanzo beans and water till smooth in a blender or food processor. Melt Coconut oil in a microwave safe bowl. Add coconut oil to beans and blend till smooth. Add maple syrup, stevia and almond butter and blend on high till mixed.
Remove mush from food processor and mix in flour. Stir in chocolate chips.
Spoon batter into a brownie pan and bake at 350º fahrenheit for about an hour, or until toothpick comes out clean. Weight till completely cooled before cutting.
